Linh is the small fish of the Mekong flood season, and fermented it gives a broth with a character of its own. Without it you cannot really make lẩu mắm or a proper bowl of bún mắm.
What to use it for
- Lẩu mắm — simmer the fish sauce until it breaks down, strain, then cook the liquid with bones
- Bún mắm
- Kho quẹt and steamed fermented fish
