Mệ Kéo has been open nearly 70 years, the longest of the group. It is busy from the moment it opens, so expect to wait for a seat.

Mụ Rơi is right beside the Imperial City and still simmers its broth over a wood fire. The owner once considered switching to electric for convenience, but was afraid of losing the smoke aroma. Order the version with crab cake here.

Cảnh Vân, in the Đông Ba – Gia Hội area, serves a small bowl of cold rice alongside, refilled free if you finish it. The habit comes from noodles leaving you hungry again quickly.

Bà Nga is the only one of the group open in the evening — useful if you arrive in Hue late.

What a full bowl contains

A “full” bowl in Hue usually holds beef, pork knuckle, crab cake and blood cake. The crab cake is the clearest thing separating a Hue bowl from one cooked elsewhere — the crab is shelled, the meat and roe picked out, pounded together with pork and annatto, and dropped into the pot about ten minutes before serving.

A correct broth smells of lemongrass and rests on shrimp paste. Those two make the dish what it is, and they are the two most often left out when it is cooked elsewhere.
